Recipe: Spaghetti with Clams
Spaghetti with clams is one of the most well-known and appreciated dishes of traditional Neapolitan cuisine.
Ingredients for 4 people:
- Spaghetti – 1 lb.
- Clams – 2 ¼ lbs.
- Garlic – 3 or 4 cloves
- Parsley
- Extra virgin olive oil
- Pepper
Spaghetti with clams is very easy to prepare, but requires a little patience. Before you begin cooking it is necessary to sort out shells. Tap every clam on a chopping block and discard any that lose any sand. Place the others in a large bowl and soak them for approximately 6 hours in a big quantity of salt water.
Once your clams have soaked, cook the clams open over a moderately high heat in a big frying pan until they open. Be sure not to cook them too long. It is important to remove them from the heat as soon as shells are opened.
While your clams are cooking, cook your spaghetti.
Chop the garlic and the parsley. Cook the garlic in the frying pan with a little olive oil until it is gold in color, add half of the chopped parsley, then return the clams to the pan and mix everything. Let them cook for just a minute or two.
Finally, drain the pasta “al dente” and add to the frying pan. Mix everything and add the rest of parsley, as well as the pepper. Mix again and serve immediately.
